A Little Cheese Update!

So, as our world and business models evolve and change, we'd like to just let you know that we will be making cheese soon! That is to say, we are about to deplete our caves, and are saving our last precious pieces for the cheese plate on our menu. Many apologies for that inconvenience.  But while we wait for the next batches coming down the road, we will be offering some delicious and interesting Vermont cheeses that we don't  

make!


For example, our absolute favorite blue/gorgonzola! Some of you might know why we don't make any blue cheese...When that natural blue is "invited" into our caves, it takes over everything! Believe you me, we know from experience! Who wants blue on Cabinbert? Well, we don't.


Back to Goredawnzola! And you thought our names were wonky. It's from Boucher Farms up north, and the fabulous cheesemaker is Dawn Boucher. Now you know where the name comes from. And wait till you taste it---creamy, nutty,  and absolutely habit-forming. Our other offering is from Parish Hill Creamery in Westminster and it's called Suffolk Punch. It's based on the traditional gourd-shaped Caciocavallo. Here is the wonderful cheesemaker Peter Dixon's description:


"The interior is firm and smooth when young and becomes flaky and drier with age. The flavor is buttery, tangy, and even peppery, particularly when aged over 6 months."


We will have pieces approximately 1/2 pound is size for you to take home, while they last!
